I'm knife user rather than enthusiast, I use knives camping (bushcraft), in the kitchen and to dig the occasional arrow out of a tree whilst practicing field archery.
My biggest knife is a Fallkniven F1, and to go larger, I'm more likely to reach for an axe or hatchet. I recently joined the Secret Order of the Swiss Army Knife on another forum, and it's reminded me of how much I like both my Swiss Champ and my Swiss Tool X.
